These, Thai Lettuce Wraps with Almond Ginger Dressing, are the perfect summer meal. Light, refreshing and easy to prepare, grain free & dairy free and great for lunch or dinner.  Thai lettuce wraps are perfect for entertaining to impress your friends and family and easy to transport for your next pot luck : )

Ingredients

Salad Base:

1 large zucchini- spiralized

2 small carrots- grated into strips

1 cup red cabbage- chopped into strips

2 spring onions- chopped fine

1 bunch cilantro- chopped fine

Spicy Almond Ginger Dressing:

1/4 cup almonds (soak them if desired)

1 small zucchini

1 lemon; juiced

1 lime; juiced

1/2 jalapeño pepper (deseeded to reduce heat)

2-3 garlic cloves

1 inch piece fresh ginger- peeled

1 tablespoon coconut aminos – or to taste

Method

  • Blend dressing ingredients until smooth.
  • Pour over your salad base and massage until fully incorporated.
  • Top with sesame seeds and avocado. Enjoy!!
