Mexi Style Roasted Vegetables

We love this mexi style veggie recipe because it makes a large batch so we have leftovers for the week. And, we add these yummy seasoned veggies to everything such as quesidillias, scrambled eggs, a side dish for our protein or taco night. The seasoning is a nice switch from plain veggies or balsamic flavours. You can keep it light or load it up. I like extra cumin.
These veggies are low on the glycemic index, so a great choice if you are cutting back on carbs. The variety of veggies and colors means we get an array of vitamins and minerals. So, all those healthy characteristics aaaand great flavour makes this our go to recipe. Enjoy!
Ingredients
1 broccoli head
1 cauliflower head
3 carrots, sliced thumb size peices
1 large zucchini, chopped into chunks
1 large red bell pepper, chopped into large pieces
1 large onion, chopped into chunks
1 teaspoon salt
3 cloves garlic
1/4 teaspoon chili powder
1/4 teaspoon ground coriander
1/2 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
2 tablespoons olive oil
1 lime, juiced (about 2 tablespoons)
2 tablespoons crumbled feta
Chopped cilantro for garnish and flavour

Position 2 oven racks in the middle of the oven and preheat to 425ºF..

Evenly divide the vegetables among 2 baking sheets

Drizzle veggies with olive oil and toss to coat. .

Add salt, smashed/chopped garlic, chilli powder, coriander, cumin, and black pepper to a small bowl. Mix together to combine.

Evenly sprinkle the seasoning mix onto the vegetables, and toss to coat.

Spread the vegetables out in a single layer so they’re not overlapping.

Transfer the baking sheets to the oven and roast for 15 minutes.

Remove from the oven, toss and return to the oven (switch the position of the baking sheets).

Roast for 15 more minutes.

Remove the vegetables from the oven and top with crumbled feta. l like to add the feta right away while the veggies are hot to let the feta melt before I add the lime juice and chopped cilantro.
