I love a great Buddha Bowl! They are easy to put together, relatively inexpensive, meat free and yield plenty so you have a quick meal for the next day. We use bean based noodles to up the protein content, and because they taste yummy. This recipe also offers a good helping of veggies by way of the cauliflower, spinach and watercress but you could add other veggies of your choice : ) Finally, pistachios, who doesn’t love toasted pistachios? Heap them on and enjoy : )
Yields aproximately. 4 servings
Buddha Bowl Ingredients:
1 tbsp Mustard seeds
1/2 Cauliflower
handful Watercress
handful Spinach
1 tsp Harissa paste & 100 mls boiling water OR ½ C. Harissa Sauce
1/2 Red Onion
Coriander
Olive Oil/Coconut Oil/Ghee/Butter
Mung bean pasta ( or any other pasta you prefer)
Toasted Pistachios
Buddha Bowl Method:
Prepare enough noodles for 4 servings
Toast 1 tbsp mustard seeds
Add Olive Oil
Saute thinly sliced cauliflower florets
Add chopped watercress and spinach
Add prepared Harissa Sauce to the pan
Divide the noodles between bowls
Add the spiced cauliflower to each bowl
Garnish with cilantro and toasted pistachios
Serve and Enjoy : )
