• 2 Tbsp coconut oil

• 1 large onion, diced

• 3 cloves garlic, minced

• 1 Tbsp fresh ginger, grated

• 2 medium sweet potato, peeled and diced

    • 2 medium carrots

• 1 cup dried red lentils, rinsed

• 4 cups vegetable broth

• 1 (14 oz) can coconut milk

• 2 cups finely chopped kale leaves

• Salt and pepper to taste

Directions

1. Heat the coconut oil in a large pot over medium/low heat. Add the diced onion and cook until translucent/ caramelized, about 5-6 minutes.

2. Add the minced garlic and grated ginger to the pot, and cook for another 2 minutes, stirring frequently. Don't let the ginger get brown, it will be bitter.

3. Stir in the diced sweet potatoes, carrots and dried red lentils, then pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the sweet potatoes and lentils are tender.

4. Once the sweet potatoes and lentils are cooked, stir in the coconut milk and chopped kale leaves. Allow the soup to simmer for an additional 5-10 minutes until the kale is wilted and tender.

5. Season the soup with salt and pepper to taste.
