Fish Tacos are Delicious and Nutritious! Eating Clean never tasted so good. Simple to make, fun to eat and serve. Make lots to have some on hand for dinner or lunch the next day or invite the neighbours for Mexican night and serve with salad or tortilla soup. Load up the blender for lime slurpies...of course : )))
Ingredients
3 pieces white fish ( we use snapper )
Shredded Cabbage
Mango salsa
Avocado Aioli Sauce
4 warm tortilla shells
(Brad makes ours from scratch but you can use store bought if you like, recipe below)
Method
Prepare Salsa
Julienne one mango & one red pepper
Add juice of one lime
A few flakes of dried red chilli pepper for heat
Set aside
Prepare Avocado Aioli Sauce
In blender, combine:
2 avocados
Juice of 1 lime
1/4 cup olive oil
1-2 garlic cloves
Salt to taste
Blend until smooth and the consistency of yogurt
Set aside
Prepare Tortilla Shells. Combine:
1 1/4 cup whole wheat flour
3 Tbsp oil
1/2 tsp salt
1/2 cup hot water
Mix flour and salt
Add oil and hot water
Mix together
Knead for a bit.
Form into a ball
Set aside for a least 20 min.
Cook tortillas in pan without oil over medium/low heat
Cover with clean towel and set aside.
Cook the Fish
Season with lime juice and salt/pepper to taste
Heat pan with 2T. olive oil
Place the fish in a pan over medium heat.
Cook for 2-3 min, then turn over and cook 2-3 min.
Once the fish is cooked, you are ready to serve.
Assembly
Place 1/4 of the fish on your tortilla
Add the shredded cabbage
Add the salsa
Top with avocado sauce and a sprinkling of cilantro if you love it as much as I do : )
