Healthy & Delicious Chocolate, Peanut Butter& Coconut Energy Balls. Otherwise known as, IMAGO Energy Balls are quick and easy to make, and a go to snack for everyone. I call them, “IMAGO” balls because I got the recipe at an IMAGO conference in Vancouver, BC. I’ve had other energy balls but these stand out as the best to me. Mostly, there is a 1 cup of everything and it all goes into the food processor for a couple minutes before rolling into balls… Easy right? : )
Makes 32 Balls
Ingredients
1 Cup of each…
Sunflower seeds, toasted
Sesame seeds, toasted
Rolled oats,
Chocolate Chips
Raisins
Dried Cranberries
½ C Cocoa Powder
2 C Peanut Butter
½ C Honey
1 C Toasted coconut (for coating)
Method
- Put everything except coconut in food processor
- Mix all ingredients together well
- You may need to add honey to combine
- Roll ¼ cup scoops into balls
- Roll in toasted coconut
Store in refrigerator up to one week.
