Cheesy cauliflower

This Cheesy Cauliflower dish is ... cheesy ... and delicious! Cheesy Cauliflower is easy to prepare and its all baked in one dish so its easy prepare ahead and serve after baking or transport to your next potluck.

This dish is perfect for the vegetarians in your life. The mozzarella, cheddar and parmesan cheese add a good amount of protein to this vegetable dish topped with crispy panko crust.

1 head cauliflower

Ingredients

2 garlic cloves, minced

2 Tablespoons butter, chopped into small pieces

1/4 Cup cream

1/2 Cup Mozzarella

1/2 Cup Sharp Cheddar Cheese

1/4 Parmesan, Grated

1/2 Cup Panko, or Bread Crumbs

Parsley for Garnish

Instructions

  • Pre heat oven to 400 deg
  • Cook cauliflower in large pot of boiling water - 8 minutes, until tender, drain
  • In a small bow, whisk garlic, oregano and cream, set aside
  • in a 9x13 pan, spread 1/2 the cauliflower in the pan
  • Pour the cream mixture over the cauliflower
  • Next, sprinkle the mozzarella over top
  • Spread the remaining cauliflower in the dish
  • Sprinkle the sharp cheddar on top
  • Add chopped butter throughout the dish
  • Bake 20 until cheese is bubbling - add parmasan and panko crumbs
  • Bake 5 - 10 min longer.
  • Serve warm
