Caramelized Sweet Potatoes with Maple, Feta & Toasted Walnuts

Ingredients:
3 medium sweet potatoes, peeled and cut into cubes
2 tablespoons olive oil
2 tablespoons pure maple syrup
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup crumbled feta cheese
1/3 cup walnuts, toasted and roughly chopped
2 tablespoons fresh parsley, chopped for garnish
Directions:
- Preheat oven to 400°F (200°C)
- In a large bowl, toss the sweet potato cubes with olive oil, maple syrup, cinnamon, nutmeg, salt, and black pepper until evenly coated.
- Spread the sweet potatoes in a single layer on the prepared baking sheet.
- Roast for 25–30 minutes, flipping halfway, until tender and caramelized on the edges.
- Remove from the oven and transfer to a serving dish.
- Sprinkle with feta cheese and toasted walnuts.
- Put back in the oven for 2-5 minutes to melt the feta
- Garnish with fresh parsley and serve warm.
